Fall is in the air, well almost in Texas! Fall in Texas always means flip flops with pumpkins! 😃 But I’m sure it is the beginnings of fall in other parts of the country and you know what that means-PUMPKIN! Pumpkin and pumpkin spice are everywhere! I saw the other day
7-11 had a Pumpkin Spice Slurpee! Now that’s different and definitely not keto, but there are so many great pumpkin recipes that can be made keto. One of the most important things to watch for though is make sure you buy just pure pumpkin purée and not the pumpkin pie filling because the latter contains sugar. OR roast your own pumpkin!
Also, pumpkin isn't typically considered a keto-friendly vegetable because it contains more carbs than other low-carb veggies like spinach or cauliflower. A cup of cooked pumpkin has about 12 grams of carbs, which can add up quickly if you're on a strict keto diet. However, in moderation and with careful portion control, pumpkin can absolutely fit into a keto lifestyle. Its rich fiber content helps lower its net carbs if you count those, and when used in small amounts in recipes like soups, pies, or even keto pumpkin spice lattes, it adds flavor without kicking you out of ketosis!
So I think in moderation, pumpkin can be a very good, nutritious lower carb veggie to enjoy. There are also several pumpkin recipes on the Virta Health website! But as always check with your health coach to be sure!

Keto Pumpkin Soups
What a great comfort food on a fall day, pumpkin soup! I absolutely LOVE both of these pumpkin soups!
This first pumpkin soup with smokey bacon was very good! I just used pumpkin purée instead of roasting my own pumpkin, but that probably will make the soup even better if you would do that! I’ll also cut back just a little on the purée to save on carbs!
This next soup, was SO good as well with the addition of the protein, Italian sausage. Any soup with Italian sausage and I’m right there!
Roasted Pumpkin
I haven’t made this yet, but it looks AMAZING to me, only trouble is I have absolutely no idea what Lebneh is! Looks kind of like Greek Yogurt. Let’s go with that if you can’t find Lebneh! But roasted pumpkin! YUM! (This is from the great Shred Happens on Instagram and YouTube!)
Pumpkin Meals
In this recipe for Keto Pumpkin Ravioli, provolone cheese is used as the pasta replacement. I remember distinctly making this recipe because I loved it so much, I just kept making it over and over during the week!

Pumpkin Desserts
I have made these Pumpkin Cheesecake Bars for Thanksgiving a few times, but they are so good definitely don’t wait till then to make them!
This is probably my all time favorite keto dessert. It goes by a few names, Sex in a Pan, Robert Redford Cake(I have no idea what he has to do with this dessert!), and Chocolate Lasaga. I have made it with and without the pumpkin layer, but always the chocolate one! But you technically could do any flavor of Sugarfree pudding you like! I’ve also seen it with a chocolate crust.
Oh wow, was this Keto Pumpkin Bread Pudding amazing! I used some of the Fox Hill Kitchens bread products to make it and I’m just so impressed with their products because they are made with such good, clean keto ingredients and are completely wheat and gluten-free. So many of the keto bread products that are manufactured contain wheat, not Fox Hill Kitchens!
