This pork tenderloin turned out pretty amazing; it looks very impressive, and it wasn’t that difficult to make. I’ve never done a bacon basket weave before, but it was the perfect outer covering for the pork tenderloin. Of course, I had to change things from the ruled.me recipe, as usual. I added some chopped mushrooms and sun-dried tomato strips to the filling and I liked that a lot. Ensure you cook out all the liquid because you don’t want soupy filling. But try this, and it would be a great special occasion or a company meal! 🐖🥓 (A delicious newbie recipe!)
Served with cauliflower mash ala George sauteed zucchini squash.
The first step was to pound out the pork tenderloin and season it. I did that on a piece of foil. Then I did the bacon basket weave on a separate piece of foil. Kind of fun! Then took the pounded tenderloin and placed it on top of the bacon.
I baked it uncovered at 350 degrees for about an hour. I turned the broiler on to crisp up the bacon more.
I then used the foil to help roll everything up into a nice little bundle of porky goodness! And secured with toothpicks and sprinkled with the rosemary, thyme, and seasoning salt 🐖🥓

Let it rest for a few minutes before slicing and serve it with Cauliflower Mash a la George, recipe and some sautéed yellow and zucchini squash. I didn’t make the veggies in the recipe, but those would be very good. Such a great dinner! 😊
