    Shared by DeniseM I was trying to make Barbara’s Strawberry Panna Cotta recipe, but, with fewer carbs. I replaced the Erythritol in the recipe with some Stevia instead. I don’t know if I put too much or what happened, but it had a slight chemical taste I didn’t like. Back to the drawing board! So I started over and I decided to make it similarly. I took about two cups of heavy cream (you could dilute this some with unsweetened almond milk) and placed it on a low simmer and I added a small box of strawberry jello. I used the Walmart brand of jello because it doesn’t contain maltodextrin. I stirred the cream and jello mixture until all the jello was dissolved and added a small splash of vanilla. I then poured the mixture into four small cups and chilled until firm for a few hours. Then before serving topped with some chopped strawberries and whipped cream, what a great dessert, thanks Barbara!šŸ“ The carb count would be about 7-8 carbs for the heavy cream and about 1-2 chopped strawberries, less carbs and calories if diluted with unsweetened almond milk. šŸ“

    Shared by Liz I love Jello! The ones that are on the sweet side, not any of the ones that might have chunks of meat in them! My favorite from growing up in the 70s was .. Watergate salad (well that was more of a pudding than jello) however, as I grew up I tried less and less as I wanted my sugars to come from elsewhere. But, since starting Virta I have fallen in love with Simply Delish raspberry-flavored gelatin. When I saw this recipe from Natasha Newton , I knew I had to try it with raspberry gelatin and blueberries instead. Very tasty!
