Think scalloped potatoes with this dish, except they are much healthier and have WAY more health benefits than the lowly potato!
I bought the chayote at Walmart, and they only had three, and they were very small. So you will need possibly about 7-8 to have a nice-sized casserole. I made my small casserole pretty much as written, except I used Gruyère cheese instead. I like it better.
Here’s my little casserole and a photo on my dinner plate. It was delicious! Very low carb and low calorie!
