My friend Karen, who was born and raised in Honduras, made this yummy dish. She recently introduced me to chayote, which I had heard of before but didn’t really know much about. I only wish I had known about it sooner because it is absolutely delicious and, I think, is something that has SO many health benefits, plus being very tasty, low carb, and low calorie! It's hard to beat that.
Here is a video that shows exactly how these Chancletas are made (Chancletas is the Spanish word for flip flops!)

Karen made her Chancletas just about the same way, but here is Karen’s version I photographed as she made this great vegetarian dish!
She started with peeled chayote, took the slices, and made a sandwich with two slices and quesadilla cheese in the middle. She then dipped them in the beaten and whipped egg whites.
Next, the chayote sandwiches were fried in olive oil until golden brown.
Then all were fried and ready to go for a tomato sauce bath!
The finished product! YUM!
