A Chaffle is a cheese-based low-carb waffle. These make a great bread replacement.
This recipe is very versatile. For the sake of writing the recipe, I measured the ingredients. However, you can adjust the amount of cream and cheese to make less. You can also easily double this recipe.
Ingredients: Base Recipe of Chaffle
One Large or Jumbo Egg
¼ cup finely shredded Cheese (you can use more up to about 1/2 cup) (I use mozzarella-I have since switched to a Mexican blend) *see note
⅛ cup (approx.) heavy cream (You can leave out the cream if desired. It is a bit crisper without it.)
Choice of flavoring additions
Preparation
Crack Egg into a mixing bowl (I use a glass Measuring cup) and whisk/beat lightly
Add Heavy Cream and stir well.
Add Cheese. Stir well.
This is the point where you may add any flavoring ingredients. Then, give it a good final mixing. (Or you can add them just before the cheese.)
Put approx. 1/3rd of the mixture into a preheated mini waffle maker. Do NOT overfill.
Cook for approximately 4 min 45 seconds. I set my timer so I can work on something else.
Repeat for the remainder of the batter. I usually get 2 ⅔ to 3 full chaffles.
*Note - I have switched to a Mexican blend - I suggest you try variations and find the one that works for you.
Tips
These can also be cooked as pancakes in a skillet or griddle. I think that adding the cream helps if you are making these into pancakes.
For flavoring, these can be savory or sweet.
Savory ideas: Add Italian spices and chop some veggie bits to add. (Ex. Mushrooms, finely chopped broccoli tops, diced raw spinach, or anything you can finely dice to fit your food plan.)
Sweet ideas: Add sweetener based on how sweet you want it. (Two tsp of xylitol is lightly sweet. Two packets of (horrors) Sweet ‘n’ Low is a bit sweeter. Then add flavorings such as Cocoa, cinnamon, vanilla extract, lemon extract, poppy seeds, orange extract, or whatever you desire.
