When I saw these I just had to make them because let’s just say my previous bagel attempts have not been the best. I just thought what if it only takes two ingredients to have a good bagel? Well, I have to say it’s true. These beautiful little mini bagels were very, very good! It only took a few minutes to mix up and knead the dough (I did use full-fat Greek yogurt) and I only made three so I just popped these babies in the air fryer. Air fryer baking is different than regular oven baking, at least in my Foodi Grill air fryer. Everything cooks way faster and gets way browner so I always use lower temps and times to play it safe. I baked them for ten minutes at 350 degrees. I sprayed an aluminum pan with cooking spray, but they still stuck to the pan a little, so perhaps in a regular oven on parchment paper might be better, or maybe if I had used butter or more spray! Something to experiment with anyway.
I did do the egg wash, but the dough was slightly sticky so that wasn’t exactly necessary and I don’t think it enhanced the appearance that much. The dough was slightly sticky, but I would avoid adding more almond flour because they were just a little crumbly as is, but not that bad. I think these would be fantastic for mini sandwiches or use them as slider buns! I remember, a long time ago, I used to buy the mini muffuletta bagel sandwiches at Jason’s Deli for parties. Jason, you need to bring those back! But they had ham and an olive tapenade on them. SOOO good! These keto bagels would be perfect for that! Anyway, the sky is the limit for what you can do with these. Give them a try!🥯

They were great with the cream cheese, flavored cream cheese would be even better or topped with some smoked salmon! 🐟
