This is a great low-carb/low-calorie sheet pan meal that’s all made in one pan. I omitted the potatoes and put a few turnips, but cauliflower florets would work also. I also seasoned the chicken thighs with seasoning. Salt and pepper. So without the potatoes, the carb count is less than at the bottom of the recipe, just figure in what potato substitute you use.
