Keto Mexican Air Fryer Quiche

My quiche obsession continues with this Mexican quiche. This turned out super good, and I really like having a prepared quiche because it is so easy to warm up in the microwave.



My modification steps:

  • I made this recipe keto by cooking the egg mixture in a silicone mold in an air fryer instead of in a pie crust.

  • I used fresh peppers and onion and left out the Rotel tomatoes and green chilies to save carbs. I’m sure both would be very good, though.

  • I added a chopped jalapeño with the peppers and onions.

  • Subbed the whole milk for about 1/2 cup of heavy cream.

  • Instead of the taco seasoning packet, I sprinkled the egg mixture with about a teaspoon of chili powder, garlic powder, onion powder, cumin, oregano, seasoning salt, and a light sprinkling of red chili flakes.

  • Poured everything in the silicone mold and baked in the air fryer for about 40 minutes at 350 degrees. So yummy!🌶️

Here’s the great silicone insert I used to make this quiche in. It really is a must and you can use it to make so many things in yiur air fryer!
