This great Instagram poster, Shred Happens, has such delicious recipes. I’ve made quite a few of them, but he focuses on Mediterranean and Middle Eastern flavors, making me want to make each one!

Here’s what mine looked like. It's not as pretty, but it's still very tasty!

This zucchini was delicious, but I made the mistake of trying to cook dinner while being on back-to-back Zoom calls. Not a good idea! I didn’t make the feta spread that goes underneath the zucchini and forgot the pistachios and sumac, but it still was very good. I’ll be making this again. Hopefully, I‘ll remember everything next time!

I’m also not sure I like mint. Maybe it’s good! But I left the mint out and made a topping for the roasted zucchini with minced garlic, lemon zest, feta cheese, and parsley. Some chopped basil or dill would be good, too, I think. I forgot to sprinkle the sumac and pistachios!

Try this, and it looks so pretty with the diagonal cuts! I cooked it on the stove and finished it in the air fryer. The oven will work, too, of course! For the protein portion of my meal, I made the pecan-crusted pork chops with cream gravy.

I used the It’s Skinny Pasta rice, which is SO good. It only has two carbs per serving, and it is so much like carby rice. I think it definitely could fool some people. It’s that good!

I’m kinda picky with game pages because a lot of them feel like they’re yelling at you, but this one was weirdly chill. The writing is super plain-English and you can skim it without missing anything important. I clicked into The Drift Boss halfway through and it kept that same vibe — clean, not a bunch of junk fighting for attention. The whole “one-button drifting” idea sounds almost too simple at first, but you can tell timing is gonna be the thing that wrecks you. Also nice that the page doesn’t get in your way while you’re trying to read or play. The headings are short and spaced out, so scrolling down feels smooth and you always know what section…
