Keto Sweet & Sticky Pork Belly Bites with Coconut Cauliflower Rice

This was a goodbye dinner for a friend from Honduras and it was one of those keto meals that you’ll want to make again and again! Pork Belly can be a little hard to find sometimes, but it’s definitely worth the effort it is SO good, especially prepared with this sweet and sticky sauce. Who doesn’t love sticky? Ha! I also thought the cauliflower rice made with the coconut milk is now my new favorite way of making it. You’ve got to try it! It would be amazing served with any Asian or Indian dish.


So let’s get to making this great meal!


I first put the pork belly on to slow cook in the chicken stock on medium-low heat covered for about 2 hours.


After the pork belly was nice and tender, it was strained and cut into pieces and fried in avocado oil, but whatever oil you want to use. I did use some seasoning salt and pepper before adding the pork belly to the pan


Fry the pork until it’s nicely browned on both sides.


Next remove the pork from the pan and add the chopped garlic and chopped ginger. Sauté for a minute or so then add the sweetener and soy sauce and stir again. I let this reduce and get slightly sticky!


I added the pork belly back to the pan and finished it with the sweet chili sauce, red chili flakes, salt and pepper and cooked for a couple more minutes until everything was nicely coated


The cauliflower rice was very easy to make. Just add the butter to the pan and sauté the chopped onion. When tender add the chopped garlic and cook that for a few seconds then add the frozen cauliflower rice. Cook this for about 5 minutes, stirring constantly, and add the can of coconut milk. Cook the cauliflower rice until all the liquid has been reduced. Then season with salt and pepper. I absolutely loved this coconut cauliflower rice!


I served this with some yummy asparagus and garnished with chopped cilantro.




For a nice keto gift, I had made some zucchini zoodles for my friend and she loved them, but had never had them. So I sent her home with a zucchini noodle slicer. This little slicer works so easily and makes the best zoodles!







This is the GHughes Sweet Chili Sauce I used. It’s great in Asian recipes and I love it as a sauce over cream cheese and use crackers, cucumber slices, or sweet peppers to dip with. I bought it at Walmart.

I have to admit that I am a G Hughes fanatic! I have been wanting to smoke pork belly for some time. I will give this one a try for sure.
