Oh my, I was not disappointed!
Ever since chaffles came on the keto scene about 4 years ago, they rocked the keto world and were an amazing bread alternative. But chaffles with this Fox Hill Kitchens Bread Mix take chaffles to the next level! They are actually like bread, not just cheese and eggs mixed together like a basic keto chaffle.
I’m still imagining other things to try with this matter. Fried shrimp? I want to try a corny dog! Batter dipped anything! Also the possibilities are endless on what to do with the tortillas and panckes! I made the basic tortillas and pancakes, but also when they were prepared a little differently developed a pita like texture that would be great for sandwiches, mini pizzas and so much more!
Here’s how to make this great batter and just let your imagination go wild with all the uses for it!

Mix all the ingredients from the batter recipe together and let it sit for at least 5 minutes. It definitely will thicken. Doesnt it look all bubbly and yeasty?
Pour 1/4 cup of batter onto a silicone mat. You technically could use a glass plate, but i tried that and tge mats are definitely the way to go. Here is a link for 2.
Cook in the microwave for 2 minutes.
Look at the beautiful fresh, hot, tortillas! Only about 4 carbs apiece!
To make these tortillas a little sturdier just brown about a minute on both sides in a dry skillet. They now are perfect for fajitas or anything you would use a pita for!
To make the chaffles you can use the same tortilla batter. I did experiment with different amounts of bread mix and cooking times. The less bread mix you use, the lower the carbs. I even tried using only one tablesppon if bread mix, plus all the other ingredients and got a very light, fluffy chaffle. They all were delicious!
You can use any waffle maker, but a single Dash Mini or the Dash 4 waffle maker are great choices!
