To make this, I first start by pan-frying the chicken. I usually use chicken breasts seasoned with salt and pepper, but I sometimes do blackened chicken and use Cajun/blackening spices. Then, remove the chicken from the pan when it is almost done and set it aside.
Then, add a stick of butter and 2-3 huge tablespoons of minced garlic in the pan. Cook the garlic on medium for about a minute, and don't let it burn. Then, I usually pour about a pint and a half of heavy cream into the pan. Let that warm slowly, and then I add probably at least 2 cups of freshly grated parmesan cheese. I prefer to grate my own, but any will work. Let that warm, and the cheese and cream combine into a sauce, then add seasoning salt and pepper to taste. add the chicken back in and serve over your low-carb pasta of choice.
My favorite low-carb pasta is by It's Skinny, and I also like the Hearts of Palm Palmini linguini. If you do the hearts of palm noodles, boil them for at least 15 minutes. Top the noodles with Alfredo sauce and garnish with more Parmesan and fresh parsley.
I like this excellent variety pack because I use all the various shapes in different recipes!
