Charlotte’s Easy Keto Shrimp Ceviche

What a great, healthy and refreshing dip! I would add some chopped jalapeño, but that is optional. The citrus juice “cooks” the shrimp. Garnish with a little cilantro! Serve with pork rinds or other low carb cracker or chips.

1 carton Pico de Gallo - not salsa

1 8 oz. package of frozen cocktail shrimp (thawed & drained)

Juice from 1 lime or lemon

1-2 chopped avocado

Mix all ingredients, wait 30 mins or more & serve.
