Spicy Keto Tuna Cucumber Bites🥒

I made these refreshing Spicy Keto Cumcumber Bites for an outdoor bbq. I thought this nice cold appetizer would help cool things off a bit. These were so easy to make and are such a healthy appetizer. I had the leftovers the next day for a great snack!


If you do have leftovers I would store them on a paper towel inside a storage container. They got a bit watery overnight, but they were still good!


These are the ingredients necessary.


Cucumber (I used an English Cucumber)

Tuna

Red Bell Pepper (I used some mini sweet peppers)

Juice of Lime or Lemon

Garlic Powder

Salt

Pepper

Red Pepper Flakes or Tabasco-optional

Everything Bagel Seasoning

Mayo (I like Sir Kensington’s Avocado Mayo) here’s the link on Amazon to buy it.







This is a great mayonnaise without unhealthy seed oils that cause inflammation.



Here’s how to make these delicious Spicy Keto Tuna Cucumber Bites!


Start out by washing and slicing a cucumber. You can leave the peel on and the seeds in if you like. I did peel and deseed the cucumber.


Then just mix all the other ingredients in a bowl. Super easy!


Next just mound the tuna mixture on top of the cucumber slices. I tried to use a small scooper, but that didn’t work so well, so I just used a small spoon.


Then sprinkle with Everything Bagel Seasoning and enjoy!



Recipe Variations


  1. Use canned crab instead of tuna. Or I think even canned salmon would be good.

  2. Add some more fresh veggies like chopped green peppers, chopped green onion, chopped jalapeños, or chopped pickles

  3. Mix everything with chopped shrimp
