A healthy yummy pudding!
I've discovered chia pudding. Yum! For variety, I added a tablespoon of cocoa and a stevia packet. Sliced one strawberry and added a sprig of mint. Delightful!
Modified Basic recipe from Carb Manager App:
1 can coconut milk, 0 carb kind
3 Tablespoons of Chia Seeds
1 Tablespoon Vanilla
2 Tablespoons of granulated Swerve
Mix together in a bowl. Heat in microwave 1 minute, stir, then heat in one minute
increments for a total of 3-4 minutes.
Refrigerate overnight.
