Legend has it that the name for this dish, puttanesca, means “ladies of the night” or some form of that in Italian! Supposedly this was a very quick, delicious sauce from the Naples region that the ladies made between customers! 😃 Well, they chose a very delicious sauce, and it is quick and easy!
I made the sauce as written except I added mild Italian sausage and used low-carb pasta. This dish is now one of my favorite keto pasta recipes! The sauce was just delicious and different from typical marinara. I used anchovy paste instead of the filets because the paste was much less expensive, and the paste would dissolve into the sauce also. I think the anchovies added an umami-type flavor. Then there are the wine, capers, and Kalamata olives (I left whole and didn’t chop) that brought the sauce to the next level. I garnished it with basil and freshly grated parmesan cheese. You’ve got to make this! 🍝
A low-carb spaghetti that could fool people
This pasta is so close to carby pasta - it has four shapes, spaghetti, angel hair, fettuccine, and rice. All the shapes are excellent, but the spaghetti shape is probably my favorite.
