Great Mexican flavors in a meatloaf!
It's Taco Tuesday! Does anyone else get their best hair-brained ideas on a whim? I've been craving meatloaf all day (a rare occurrence), but then | remembered that it's Taco Tuesday. So guess what I'm making! Taco meatloaf! Stay with me you naysayers!!
1.5 lb ground beef
1 taco seasoning pack
1 can of green chilis
2 eggs
Two handfuls of pork rinds crushed.
Smoosh it all together with your hands and put it in a loaf pan. Spread a thin layer of
salsa over that and cover it with shredded cheddar. Bake at 350 for 50 minutes.
I have sour cream and extra salsa to top it with! You could throw some shredded lettuce and diced tomatoes on top and it would be perfect!
