A very yummy open-faced egg chaffle, using a Pizzelle maker to give a different texture to the chaffle. What a new and creative way to serve a breakfast chaffle! There are lots of ways to do different variations of this using different meats and cheeses, so either buy a Pizelle maker or dust yours off. It’s a very versatile appliance! I’ll put a link for a good one below. 🧇

I went full Italian this morning for breakfast. I made an open-faced capocollo egg pizzelle chaffle
This morning, I had the honor and privilege to prepare breakfast for my very hard-working, supportive wife. This meal is full-on Virta.
I have been on this kick of sandwich meals, but, have been unsuccessful with my chaffle-making.
I only use a whole egg and cheese, plus almond flour for making the chaffles. I am very stingy with my carb intake.
Well, my chaffles came together this morning! Serving this meal open-faced seems very
appropriate for my wife. She deserves fancy things in life every now and then. Here's to the love of my life. Playing with food is awesome. This meal was so delicious and it melted in my mouth. My wife very much enjoyed it. It makes me very happy to know she enjoyed my keto meal.
This is my original recipe:
Pizzelle maker
Mozzarella cheese mixed with one whole egg
Uncured capocollo
Spinach
Onion cut into rings
Bell pepper
Cook two eggs in egg rings filled with onions and bell peppers. I cooked them slowly so they would not be so hard. Place the capocollo and spinach on the other open pizzelle and serve.
This is the Pizelle maker I use, and I like it a lot. It has a shaper cone to make waffle cones and a bowl shaper to make waffle bowls! 😊
