Keto Blueberry Lemon Cheesecake Stuffle

My very first stuffle! It came out excellent despite a couple of first-time learning curve mishaps! If you get the Chefman Stuffler machine, make sure you hold it closed when you pop the clamp! Pressure builds up and if the stuffle isn’t completely done it shoots the batter out all over everything! It was frightening! Ha!


To make the cheesecake filling I took a half block of cream cheese, a little lemon juice and lemon zest, a splash of vanilla, and liquid stevia. I then used the waffle batter recipe and it was excellent!


I made the mistake of putting too much batter into the machine! So I put the bottom layer of batter down, then added blueberries plus dollops of the lemon cheesecake and then more batter.


I cooked the first one for 8 minutes and that was not enough. I did the second one for 10 minutes and that came out great. I made the mistake the first time of not checking the green light to see if it was off. Wait until the green light goes off! Despite all the trials - my first homemade stuffle tasted very good!
