This delicious stir fry recipe can use any protein you like, such as chicken, pork, steak, and shrimp.
Basic marinade
Cut whatever protein you like into bite-size pieces
Mix olive oil, minced garlic, fresh minced ginger, soy sauce, and salt and pepper. Quantities are to taste. For extra spicy, add a couple of squeezes of sriracha.
Let marinade for at least 30 minutes.
While waiting on the marinade, chop and slice any veggies you like. Onion, green pepper, mini sweet peppers, snow peas, zucchini, mushrooms, broccoli, etc. I like to sprinkle a few water chestnuts, but they are higher carb, so just watch out for that or omit them entirely.
Use a wok or a skillet with high sides and get it hot. Pour a little oil of your choice and remove protein from the marinade. Cook on high heat, moving it around very quickly. This should only take a couple of minutes. You don’t want to overcook it.
Remove protein from pan and set aside. Pour marinade into the pan and add veggies in order of the ones that take the longest to cook down to the shortest time. You want the veggies to remain crispy.
Add protein back in and serve over cauliflower rice or Miracle Rice.
Garnish with green onion, cilantro, and peanuts or cashews if you like. Enjoy!
